Spring Has Sprung Series: Spring Entertaining

As the weather gets warmer we want to spend more time outside with our family and friends.  This spinach and strawberry chicken salad is a perfect dish for two or for a group of friends enjoying a sunny afternoon.   Additionally, not everyone has the time or talent to make every meal from scratch and I have added a few short cuts.

Ingredients: Makes 4

  • 1 Bag of baby spinach
  • 4 Honey roasted chicken breasts or 2 boxes of Purdue Short Cuts Honey Roasted Chicken Breasts
  • Fresh basil 
  • Fresh strawberries 
  • Strawberry poppyseed vinaigrette (Marzetti makes a great one)
  • Chopped honey roasted almonds
  • Crumbled goat cheese

Add baby spinach to each plate.  Top with slices of honey roasted chicken, sliced strawberries, chopped honey roasted almonds, chopped basil, and crumbled goat cheese.  Drizzle strawberry poppyseed vinaigrette as desired over salad and serve with fresh sourdough bread.
